Hazelnut Bread Pudding



You will need:
3 eggs beaten
1 c sugar
1/2 stick, plus 1 Tbsp Smart Balance butter
3 cups of bread pieces
1 tsp baking powder
pinch of ginger & cinnamon
1/3 c packed brown sugar
1 1/2 c scaled organic milk
1/2 c Frangelica or Hazelnut liqueur

Mellt 1/2 stick of butter and set aside. Reserve brown sugar & hazelnut, Mix all other ingredients together. Put mixture in greased loaf pan, top with butter and hazelnut and sprinkle with reserved brown sugar & dash of cinnamon. Bake at 350' until brown.

Bacon & Broccoli Salad

I had Sunday dinner at my friends house today. She served this great Broccoli salad, sooo good I had to share!

Ingredients:
1 head of Broccoli, chopped
1 purple onion, diced
1/2 c raisins
1 c crumbled bacon
1 c shredded Sharp Cheddar cheese
1 c pecans, chopped

Dressing:
1/2 c Miracle Whip
1/4 c sugar
2 T vinegar

Directions:
Mix dressing ingredients together, adding more miracle whip or water until desired consistency is reached. Refrigerate until ready to serve. Mix all salad ingredients together (or layer if preferred).
Fold dressing into salad, until well mixed. OR serve on the side so that everyone can have the amount they need (plus leftover salad keeps longer)

This salad was fantastic.
My friend served it with pork chops and baked sweet potatoes.

It would be great for lunch, brunch, showers, hoidays, & potlucks.

I think it could be potentially quite dangerous if Blue cheese or Feta Cheese was substituted for the cheddar. (Am I drooling?)

Vegan Spiced Oatmeal Cookies

Vegan-Spiced Oatmeal Cookies
2/3 cup Smart Balance Oil ( I like this because f the Omega 3's, substitute canola oil if you dont have this)
1 Cup Brown Sugar, packed
3/4 Cup Sugar
2 tsp Vanilla Extract
1/4 cup water
1/2 cup Applesauce
3/4 Cups Flour
1/2 Cup Ground Flax Seeds
1/2 Cup Almond Meal
2 tsp Cinnamon, or more!!
pinch of ginger (and cardamon if you like)
1 tsp Baking Soda
1/2 tsp Salt
3 Cups Oats (rolled)
1 1/2 Cups Raisins, dried cranberries, etc (I never measure this part- a couple of handfuls. More the better in my book!)
1 cup chopped walnuts, pecans or cashews are very yummy too! (optional)


Directions:
1. Preheat oven to 350°F.
2. In a large mixing bowl, oil, applesauce, water brown sugar, sugar, and vanilla until light and fluffy.
3. In another bowl, combine flour, almond meal, flax seeds, cinnamon, baking soda, and salt.
4. Gradually add flour mixture to sugar mixture until well blended.
5. Stir in oats, dried, and nuts (if using).
6. On a a nonstick cookie sheet drop the dough by rounded teaspoonfuls spaced 2-3 inches apart.
7. Bake for 11-14 minutes or until edges begin to brown.
8. Let stand for 3 minutes before removing from baking sheet.
9. Curl up with your hunny, a pot of hot tea and ENJOY!

new graphics from Midnight Design Studio

I just got all new fancy graphics & I'm uber excited.


Fancy, I know! 
I got everything in a package (& at a great deal!) So, I now have matching blog & Etsy banners, avatars, and Mini Cards, which I plan to use as clothing tags. I just the way they turned out. 

I got these dapper designs from Kimberly  at Midnight Design Studio.  Kimberly was great, very helpful (she answered all 1001 and one of my questions, and was so patient with me thru my ADD distracting side turns! ha!) All in all, I loved the way they turned out and opportunity to make a new friend.
